Tupig, also known as intemtem or kangkanen, is a Filipino rice cake originating from northwestern Luzon, particularly the regions of Pangasinan, Tarlac, and Ilocos. It is made from ground slightly-fermented soaked glutinous rice (galapong) mixed with coconut milk, muscovado sugar, and young coconut (buko) strips.
The history of tupig in Tarlac is closely tied to the agricultural practices of the region. Tarlac, known for its fertile land, grows rice and other crops.
The indigenous people of Tarlac, like in many parts of the Philippines, developed recipes that utilized locally available ingredients.
Tupig, made from sticky rice or "malagkit," was originally cooked by wrapping the mixture in banana leaves and grilling it over an open flame.
This method of cooking, which uses the banana leaf as a wrapper, imparts a smoky flavor to the rice cake, making it distinctive.
The use of coconut and sugar gave tupig a sweet flavor that complemented the savory taste of the grilled rice cake.
As with many traditional Filipino foods, tupig is a symbol of local culture and heritage, passed down through generations in Tarlac and neighboring areas.

Litson Camiling, better known as Chicharon Camiling, is a special delicacy in Camiling, Tarlac.
Some people refer to it as the juicy cousin of Lechon Kawali and Vigan’s Bagnet because that is exactly what it is.
While it comes with the same crunch and deliciousness of the aforementioned food products, Litson Camiling has more juice in it, making it feel more meaty to the taste.
The creation of Chicharon Camiling likely started in the early 20th century, possibly influenced by the widespread popularity of chicharon (fried pork skin) in the Philippines. Chicharon, in general, is a beloved Filipino snack and street food, often sold by street vendors across the country.
However, Chicharon Camiling became particularly famous due to the unique quality and method of preparation in Camiling.
